Classic Two-Ingredient Mother's Day Bites

Ingredients
  

Goat Cheese & Fig Jam Bites
  • 4 oz (113g) Goat Cheese log or round
  • 1/4 cup Fig Jam
Prosciutto & Melon Bites
  • 4-6 Prosciutto thin slices
  • 1 Cantaloupe (or honeydew) small, ripe, cut into bite-sized pieces
Smoked Salmon & Cream Cheese Bites
  • 4 oz (113g) Smoked Salmon
  • 1/4 cup Cream Cheese plain or dill-flavored
  • 12-15 Crackers (or pumpernickel bread rounds)
Puff Pastry & Pesto Swirls
  • 1 sheet Puff Pastry from a 17.3 oz package
  • 1/4 cup Pesto
Grape Tomatoes & Mini Mozzarella Balls
  • 10-12 Grape Tomatoes
  • 10-12 Mini Mozzarella Balls (Bocconcini)
  • Toothpicks as needed

Method
 

Goat Cheese & Fig Jam Bites
  1. Spread fig jam onto a cracker or toast round, then top generously with goat cheese. Arrange the bites on a platter.
Prosciutto & Melon Bites
  1. Prepare the melon by removing seeds and rind, then cut into bite-sized pieces. Wrap each melon piece with a thin slice of prosciutto, securing with a toothpick if desired, and arrange.
Smoked Salmon & Cream Cheese Bites
  1. Spread cream cheese onto crackers, then place a small, ruffled piece of smoked salmon on top of each.
Puff Pastry & Pesto Swirls
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Unroll puff pastry, spread with pesto, and roll tightly into a log.
  2. Slice the log into ½-inch rounds, place on the baking sheet, and bake for 12-15 minutes until golden and puffed. Let cool slightly before serving.
Grape Tomatoes & Mini Mozzarella Balls
  1. Thread one mini mozzarella ball and one grape tomato onto each toothpick. Repeat for remaining ingredients and arrange on a platter.

Notes

Feel free to mix and match the components or add other complementary ingredients. These bites are best served fresh, but can be prepared a few hours in advance and stored in the refrigerator.
