Method

Preparation
  1. Cook and crumble the breakfast sausage, then sauté the chopped onion and bell pepper until tender-crisp.
  2. Cube the bread into 1-inch pieces and lightly grease a 9x13 inch baking dish.
  3. Spread the cubed bread evenly in the dish, then layer with sausage, onions, bell peppers, and half of the cheddar cheese.
Assemble and Chill
  1. Whisk eggs, milk, salt, and pepper in a large bowl, then pour over the layers in the baking dish and top with remaining cheese.
  2. Cover and refrigerate for 4 hours or overnight to allow the bread to soak.
Baking and Serving
  1. Preheat oven to 350°F (175°C), then remove plastic wrap from the casserole and bake for 45-60 minutes.
  2. Bake until golden brown and a knife inserted into the center comes out clean.
  3. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For best results and maximum flavor, chill the casserole overnight to allow the bread to fully absorb the egg mixture. This also makes for an easier morning if you're serving it for breakfast or a brunch gathering.
