Classic Totchos

Classic Totchos are a fun and customizable twist on nachos, using crispy tater tots as the base. Top with your favorite seasoned meat, cheese, and fresh ingredients for a crowd-pleasing dish.

  • 1 bag frozen tater tots (32-ounce)
  • 1 pound ground beef, ground turkey, or shredded chicken (cooked and seasoned)
  • 1 can black beans (15-ounce), rinsed and drained
  • 1 cup shredded Colby Jack or cheddar cheese (or a blend)
Toppings
  • 1/2 cup pickled jalapeño slices (optional, for a kick)
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup diced tomatoes (or pico de gallo)
  • 1/4 red onion finely diced

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C) and arrange the frozen tater tots in a single layer on a large baking sheet for maximum crispiness.
  2. Bake the tots for 20-25 minutes, flipping them halfway through, until they are deeply golden brown and very crispy.
  3. While the tots bake, prepare your toppings; cook and season ground meat, warm shredded chicken, and rinse/drain black beans.
  4. Remove the crispy tots from the oven and arrange them in a slightly overlapping layer on the baking sheet.
  5. Sprinkle half of the cheese over the tots, then add your cooked meat or beans, followed by the remaining cheese and optional jalapeños.
  6. Return the baking sheet to the oven for 5-10 minutes until the cheese is completely melted and bubbly.
  7. Carefully remove from the oven and dollop generously with sour cream or Greek yogurt; scatter with cilantro, diced tomatoes, red onion, and any optional toppings like avocado or salsa, then serve immediately.

Notes

For a spicier kick, add more jalapeños or a dash of hot sauce. You can easily customize the toppings with your favorite nacho ingredients like corn, olives, or different cheeses.
