Preparation
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Combine soy sauce, honey, rice vinegar, ginger, garlic, sesame oil (if using), and red pepper flakes (if using) in a bowl. Whisk to create the marinade.
Assemble Kebabs
- Thread the shrimp, red bell pepper, yellow bell pepper, zucchini, and red onion alternately onto the skewers.
- Place the assembled kebabs in a shallow dish and pour the marinade over them. Ensure they are evenly coated, then cover and marinate in the refrigerator for 15-20 minutes.
Cooking
- Preheat your grill or grill pan to medium-high heat. Lightly oil the grill grates to prevent sticking.
- Grill the kebabs for 2-3 minutes per side, or until the shrimp are pink and opaque and the vegetables are tender-crisp. Baste with any remaining marinade during grilling.
Serve
- Remove kebabs from the grill, sprinkle with toasted sesame seeds and fresh cilantro if desired, and serve immediately.
Notes
For best results, do not marinate the shrimp for too long, as citrus can begin to cook them. If you don't have a grill, you can roast these in the oven at 400°F (200°C) for 10-15 minutes, flipping halfway through.
