  • 1 lb (450 g) Large shrimp peeled & deveined, thawed
  • 1 ½ cups uncooked Short-grain rice or jasmine/brown rice
  • ¼ cup Low-sodium soy sauce
  • 2 Tbsp Honey
  • 1 Tbsp Rice-vinegar
  • 1 tsp Fresh ginger grated
  • 2 cloves Garlic minced
  • 1 tsp Sesame oil
  • 1 tsp Cornstarch optional
  • 1 medium Bell pepper any color, sliced
  • ½ cup Snap peas
  • 1 small Carrot julienned
  • 2 Tbsp Green onions sliced
  • 1 Tbsp Sesame seeds

Method
 

Cooking Instructions
  1. Thoroughly rinse the rice under cold water until the water is clear, then combine it with 2 ¼ cups of water in a pot.

Notes

For extra flavor, toast the sesame seeds lightly before sprinkling them on top. Adjust spice level by adding more or less grated ginger or a dash of sriracha. If you don't have fresh ginger, you can use ½ teaspoon of ground ginger instead. For a thicker sauce, gradually add more cornstarch slurry until desired consistency is reached.
