  • 1 lb ground beef (80/20) or ground turkey (93/7)
  • 1 packet (1 oz) taco seasoning
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 2 boxes (15 count each) mini phyllo shells

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and arrange mini phyllo shells on a baking sheet.
  2. In a skillet, brown the ground beef or turkey over medium-high heat, then drain any excess fat.
  3. Stir in the taco seasoning and cook for a couple of minutes until fragrant, then remove from heat.
  4. In a separate bowl, combine softened cream cheese, sour cream, and ranch seasoning, stirring until smooth.
  5. Add the seasoned meat and shredded cheddar cheese to the cream cheese mixture and fold gently until well combined.
  6. Spoon a generous amount of the taco ranch mixture into each mini phyllo shell.
  7. Bake for 12-15 minutes, or until the filling is hot and bubbly, and the shells are lightly golden.
  8. Remove from the oven, let cool slightly, and garnish with your preferred toppings before serving warm.

Notes

These bites are great for parties and can be prepared ahead of time, then baked just before serving. For a spicier kick, add a pinch of cayenne pepper to the meat mixture. Remember to drain the meat well to prevent soggy shells.
