Method
 

Instructions
  1. If using chicken breasts, pound them to an even thickness of about ¾ inch; then pat the chicken dry with paper towels.
  2. In a medium bowl, whisk together all marinade ingredients: olive oil, minced garlic, lemon juice, Dijon mustard, oregano, thyme, salt, and pepper.
  3. Add chicken to the marinade, ensuring all pieces are thoroughly coated. Cover and refrigerate for 30 minutes to 4 hours.
  4. Preheat your grill to medium-high heat (about 400°F / 200°C) and lightly oil the grates to prevent sticking.
  5. Remove chicken from marinade, discarding any excess, and place it on the preheated grill.
  6. Grill chicken for 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F / 74°C).
  7. Transfer grilled chicken to a cutting board, let it rest for 5 minutes, then slice or serve, garnished with fresh parsley if desired.

Notes

Marinating the chicken for a longer period (up to 4 hours) will result in more tender and flavorful chicken. Always ensure the chicken reaches an internal temperature of 165°F (74°C) for food safety.
