- If using chicken breasts, pound them to an even thickness of about ¾ inch; then pat the chicken dry with paper towels.
- In a medium bowl, whisk together all marinade ingredients: olive oil, minced garlic, lemon juice, Dijon mustard, oregano, thyme, salt, and pepper.
- Add chicken to the marinade, ensuring all pieces are thoroughly coated. Cover and refrigerate for 30 minutes to 4 hours.
- Preheat your grill to medium-high heat (about 400°F / 200°C) and lightly oil the grates to prevent sticking.
- Remove chicken from marinade, discarding any excess, and place it on the preheated grill.
- Grill chicken for 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F / 74°C).
