  • 24 large button or cremini mushrooms
  • 8 oz raw shrimp, peeled & deveined
  • 2 cups fresh spinach, loosely packed
  • 1 cup cream cheese, softened
  • ½ cup parmesan cheese, grated
  • ½ cup mozzarella cheese, shredded
  • 2 tbsp unsalted butter, divided
  • 2 cloves garlic, minced
  • ¼ cup onion, finely diced
  • ¼ tsp red-pepper flakes optional
  • Salt & freshly cracked black pepper to taste
  • 2 tbsp fresh parsley, chopped

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Gently wipe the mushroom caps with a damp paper towel and twist out the stems.

Notes

For extra flavor, you can brush the mushroom caps with a little olive oil before stuffing. Ensure the shrimp are fully cooked before serving, indicated by an opaque, pink color and firm texture.
