  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • red bell pepper diced
  • jalapeño seeded and minced (or more, to taste)
  • 4 cups chicken or vegetable broth low sodium preferred
  • 1 can diced tomatoes (14.5 oz) undrained
  • 1 can full-fat coconut milk (13.5 oz)
  • 2 tbsp fish sauce (optional, but highly recommended)
  • 1 tbsp sriracha or chili garlic sauce (adjust to desired spice level)
  • 1 tsp ground cumin
  • ½ tsp turmeric powder
  • 1 lb large shrimp peeled and deveined (fresh or frozen, thawed)
  • ½ cup fresh cilantro chopped
  • 2 green onions sliced
  • lime juice from 1 lime
  • Salt and freshly ground black pepper to taste

Method
 

Instructions
  1. Heat olive oil in a large pot over medium heat, then add garlic, ginger, bell pepper, and jalapeño.
  2. Sauté for 3-5 minutes until vegetables soften and become fragrant.
  3. Stir in tomatoes, broth, coconut milk, fish sauce (if using), sriracha, cumin, and turmeric; bring to a boil, then simmer for 15-20 minutes.
  4. Increase heat to medium, add shrimp, and cook for 3-5 minutes until pink.
  5. Remove from heat, stir in cilantro, green onions, and lime juice.
  6. Season with salt and pepper to taste, then ladle and serve hot.

Notes

Adjust the jalapeño and sriracha to your preferred spice level. Do not overcook the shrimp, as they can become tough. Fish sauce is optional but enhances the overall flavor profile.
