Potato Noodles
  • 200 g Potato Noodles (Korean potato starch noodles or glass noodles)
Sauce
  • 3-4 cloves Garlic minced
  • 1 inch piece Ginger freshly grated
  • 3 tablespoons Soy Sauce
  • 1-2 tablespoons Chili Garlic Sauce (adjust to preference, e.g., Sriracha or Gochujang)
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Sesame Oil toasted
  • 1 teaspoon Brown Sugar
Garnish
  • 2-3 Scallions chopped (white and green parts, for garnish)
  • 1 teaspoon Sesame Seeds toasted (for garnish)
  • Chili crisp for extra heat and crunch (optional)

Method
 

Cooking Noodles
  1. Bring a large pot of water to a boil, then cook the potato noodles according to package directions until tender and chewy (5-7 minutes).
Prepare Sauce
  1. While noodles cook, whisk together minced garlic, grated ginger, soy sauce, chili garlic sauce, rice vinegar, sesame oil, and brown sugar in a medium bowl.
Combine
  1. Drain the cooked noodles thoroughly; rinse with cold water if desired to prevent sticking, then drain well again.
  2. Add the drained noodles to the prepared sauce and toss until fully coated.
Serve
  1. Transfer to serving bowls and garnish with chopped scallions and toasted sesame seeds.
  2. Add chili crisp if desired and serve immediately.

Notes

Adjust chili garlic sauce to your preferred spice level. For a richer flavor, let the noodles sit in the sauce for a few minutes before serving.
