  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper or more, to taste
  • Salt and black pepper to taste
  • 1-2 fresh limes (juice from)
  • 1/4 cup fresh cilantro chopped

Cooking Steps
  1. Preheat your oven to 400°F (200°C) and wash and cut potatoes into 1-inch cubes, ensuring uniform size for even cooking.
  2. Toss potato cubes with olive oil in a large bowl, then combine chili powder, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper, salt, and black pepper in a separate bowl.
  3. Sprinkle the spice mixture over the potatoes and toss thoroughly until each cube is well coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet, roasting for 25-35 minutes and flipping halfway, until golden brown, tender, and crispy.
  5. Transfer roasted potatoes to a serving bowl, drizzle with fresh lime juice, and toss again for a zesty flavor.
  6. Garnish with fresh chopped cilantro and serve immediately, optionally adding Cotija cheese or sour cream.

Notes

For extra crispiness, ensure the potatoes are completely dry before tossing with olive oil, and do not overcrowd the baking sheet. Adjust cayenne pepper to your preferred spice level. A squeeze of fresh lime juice at the end brightens all the flavors significantly.
