Ingredients
  

Chicken
  • 2 (≈ 8 oz each) skinless & boneless chicken breasts
Marinade
  • 2 Tbsp olive oil
  • ½ cup sugar-free or low-sugar BBQ sauce
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
Zoodles
  • 4 medium (≈ 1 lb) zucchini
  • 1 Tbsp (for zoodles) extra-virgin olive oil
  • ¼ tsp (optional) red pepper flakes
  • 2 Tbsp chopped fresh parsley
  • 1 tsp lemon zest

Method
 

Preparation
  1. Combine BBQ sauce, olive oil, smoked paprika, garlic powder, salt, and pepper in a shallow dish, stirring until smooth to create the marinade.
  2. Pat the chicken breasts dry, then submerge and coat them in the marinade. Allow to marinate for 10 minutes, or refrigerate for up to 2 hours for enhanced flavor.
  3. Preheat your grill or grill pan to medium-high heat, approximately 400°F.

Notes

For best results, marinate the chicken for at least 30 minutes. If you don't have a spiralizer for zoodles, you can use a vegetable peeler to create ribbons.
