Classic Simple Salmon with Rice

Ingredients
  

Main Ingredients
  • 2 salmon fillets (about 6 oz each), skin on or off
  • 1 tbsp olive oil
  • salt and black pepper to taste
For the Rice
  • 1 cup long-grain white rice (e.g., Basmati or Jasmine)
  • 2 cups water or chicken/vegetable broth
  • 1/2 tsp salt
For Serving
  • 1-2 tbsp fresh dill, chopped
  • lemon wedges

Method
 

Cooking the Rice
  1. Rinse the rice, combine with water or broth and salt, then bring to a boil.
  2. Reduce heat, cover, and simmer for 15-18 minutes until all liquid is absorbed.
  3. Remove from heat, let stand for 5 minutes (covered), then fluff with a fork.
Cooking the Salmon
  1. Preheat oven to 400°F (200°C) and pat salmon fillets dry.
  2. Place salmon on a lined baking sheet or oven-safe dish, drizzle with olive oil, and season with salt and pepper.
  3. Bake for 12-18 minutes until cooked through and easily flakes (internal temperature should be 145°F/63°C).
Assembly
  1. Fluff the cooked rice and place a generous portion on a plate; top with a salmon fillet.
  2. Sprinkle with fresh chopped dill and serve with a lemon wedge for squeezing.

Notes

Adjust seasoning to your taste. For extra flavor, you can toast the rice before adding liquid.
