Cooking the Rice
- Rinse the rice, combine with water or broth and salt, then bring to a boil.
- Reduce heat, cover, and simmer for 15-18 minutes until all liquid is absorbed.
- Remove from heat, let stand for 5 minutes (covered), then fluff with a fork.
Cooking the Salmon
- Preheat oven to 400°F (200°C) and pat salmon fillets dry.
- Place salmon on a lined baking sheet or oven-safe dish, drizzle with olive oil, and season with salt and pepper.
- Bake for 12-18 minutes until cooked through and easily flakes (internal temperature should be 145°F/63°C).
Assembly
- Fluff the cooked rice and place a generous portion on a plate; top with a salmon fillet.
- Sprinkle with fresh chopped dill and serve with a lemon wedge for squeezing.
Notes
Adjust seasoning to your taste. For extra flavor, you can toast the rice before adding liquid.
