  • 1 diced tomatoes undrained
  • 1 cup frozen mixed vegetables peas, carrots, corn, green beans
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • fresh parsley chopped (for garnish, optional)

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet, then add ground turkey and cook until browned, breaking it apart and draining excess fat.
  2. Sauté chopped onion with the turkey until softened, then stir in minced garlic and cook for one minute until fragrant.
  3. Add rice, broth, diced tomatoes, Italian seasoning, salt, and pepper to the skillet, bringing the mixture to a boil.
  4. Reduce heat to low, cover, and simmer for 15-20 minutes until the liquid is absorbed and rice is tender.
  5. Stir in frozen mixed vegetables, re-cover, and cook for an additional 5 minutes until heated through.
  6. Remove from heat, let it rest covered for 5 minutes, then fluff the rice with a fork and garnish with parsley if desired before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the Italian seasoning. Feel free to substitute other quick-cooking vegetables like spinach or bell peppers. Ensure the skillet is tightly covered during simmering to allow the rice to cook properly.
