  • 12 oz silken tofu (340g) box, well drained
  • 8 oz high-quality dark chocolate (225g) (60-75% cacao), dairy-free if preferred, roughly chopped
  • 1/4 cup maple syrup or agave nectar (60ml) (adjust to taste)
  • 1 teaspoon vanilla extract
  • salt Pinch of

Method
 

Preparation
  1. Chop the dark chocolate and place it in a heatproof bowl.
  2. Melt the chocolate over a double boiler or in a microwave, stirring until smooth.
  3. Drain the silken tofu and transfer it to a high-speed blender or food processor.
  4. Add the melted chocolate, maple syrup, vanilla, and salt to the tofu; blend until completely smooth.
  5. Pour the mousse into serving dishes, cover, and refrigerate for 2-4 hours until set.

Notes

For an extra touch, garnish with fresh berries, a sprinkle of cocoa powder, or a dollop of dairy-free whipped cream before serving.
