  • 1 large Ripe mango ≈ 1 ½ cups diced
  • 12–14 Butter lettuce (or Bibb) leaves washed & dried
  • ½ Red bell pepper finely diced
  • ¼ cup Fresh cilantro chopped
  • 2 Green onions thinly sliced
  • 1 Jalapeño (or Thai bird-chili) minced (optional)
Dressing & Cooking
  • 3 Tbsp Lime juice ≈ 1 lime
  • 2 Tbsp Fish sauce
  • 1 Tbsp Honey or agave nectar
  • 1 tsp Sesame oil optional
  • 1 Tbsp Peanut oil or vegetable oil
  • Salt & black pepper to taste
Optional Toppings
  • Crushed peanuts
  • Toasted coconut
  • Fried shallots

Cooking Instructions
  1. Pat the shrimp dry and season lightly with salt, pepper, and optional smoked paprika.
  2. Heat the oil in a large skillet over medium-high heat until it shimmers, then add the shrimp in a single layer and cook for 2 minutes.

Notes
