Classic Shrimp Lettuce Wraps with Peanut Sauce

Ingredients
  

Shrimp and Lettuce
  • 1 lb (450 g) Large raw shrimp, peeled & deveined
  • 12–14 Butter lettuce or iceberg leaves large
For the Stir-fry
  • 2 Tbsp Vegetable oil canola, peanut, or grapeseed
  • 2 Garlic cloves, minced
  • 1 tsp Fresh ginger, grated
  • ½ tsp Red-pepper flakes or Sriracha
For the Peanut Sauce
  • ¼ cup Creamy natural peanut butter
  • 3 Tbsp Low-sodium soy sauce
  • 1 Tbsp Rice vinegar
  • 1 Tbsp Lime juice fresh
  • 1 Tbsp Brown sugar or honey
  • 3–4 Tbsp Warm water
For Garnish
  • ½ cup Julienned carrots
  • ½ cup Cucumber, seeded & julienned
  • ¼ cup Fresh cilantro leaves
  • 2 Tbsp Crushed roasted peanuts
  • Lime wedges for serving

Method
 

Peanut Sauce Preparation
  1. In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, brown sugar (or honey), and 3 tablespoons of warm water until smooth.
  2. If the sauce is too thick, add the remaining tablespoon of warm water; set aside.
Shrimp Stir-fry
  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add minced garlic, grated ginger, and red-pepper flakes (or Sriracha); sauté for 30 seconds until fragrant.
  3. Add shrimp to the skillet and cook for 2–3 minutes per side, until pink and opaque; remove from heat.
Assemble the Wraps
  1. Arrange lettuce leaves on a platter.
  2. Fill each lettuce leaf with a spoonful of the cooked shrimp.
  3. Top with julienned carrots, cucumber, fresh cilantro, and crushed peanuts.
  4. Serve immediately with lime wedges and the prepared peanut sauce on the side.

Notes

For extra flavor, marinate the shrimp in a tablespoon of soy sauce and a teaspoon of ginger for 15 minutes before cooking. You can also add other vegetables like bell peppers or bean sprouts to the wraps for added crunch and nutrition.
