Preparation
- Pat the shrimp dry and toss with 1 tablespoon of olive oil, Italian seasoning, smoked paprika, red pepper flakes, salt, and pepper until coated.
- Heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the seasoned shrimp for 1-2 minutes per side until pink; remove and set aside.
Cooking
- Add the bell pepper and red onion to the skillet, cooking for 3-5 minutes until softened. Then add broccoli and garlic, cooking for another 3-4 minutes until tender-crisp.
- Return the cooked shrimp to the skillet with the vegetables. Squeeze in lemon juice and toss gently for about 1 minute to combine flavors.
Serving
- Garnish with fresh chopped parsley and serve immediately.
Notes
For extra flavor, you can add a splash of white wine or chicken broth when sautéing the vegetables. Adjust spice level by increasing or decreasing red pepper flakes. Serve this skillet dinner with rice or quinoa for a complete meal.
