  • 1 ½ lbs large shrimp peeled and deveined, tails on or off
  • 2 tbsp olive oil divided
  • 1 bell pepper any color, thinly sliced
  • 1 small red onion thinly sliced
  • 1 cup broccoli florets or asparagus spears, cut into pieces
  • 2 cloves garlic minced
  • ½ tsp dried Italian seasoning
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes optional, for a kick
  • Salt and freshly ground black pepper to taste
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

Preparation
  1. Pat the shrimp dry and toss with 1 tablespoon of olive oil, Italian seasoning, smoked paprika, red pepper flakes, salt, and pepper until coated.
  2. Heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the seasoned shrimp for 1-2 minutes per side until pink; remove and set aside.
Cooking
  1. Add the bell pepper and red onion to the skillet, cooking for 3-5 minutes until softened. Then add broccoli and garlic, cooking for another 3-4 minutes until tender-crisp.
  2. Return the cooked shrimp to the skillet with the vegetables. Squeeze in lemon juice and toss gently for about 1 minute to combine flavors.
Serving
  1. Garnish with fresh chopped parsley and serve immediately.

Notes

For extra flavor, you can add a splash of white wine or chicken broth when sautéing the vegetables. Adjust spice level by increasing or decreasing red pepper flakes. Serve this skillet dinner with rice or quinoa for a complete meal.
