  • 12 oz Spaghetti (or linguine, bucatini)
  • 1 lb Large raw shrimp, peeled & deveined
  • 2 Tbsp Extra-virgin olive oil
  • 3 cloves Garlic, minced
  • ¼ tsp Red-pepper flakes
  • 4 large Egg yolks
  • 1 cup Freshly grated Parmesan cheese
  • 1 ½ tsp Freshly ground black pepper (plus more to taste)
  • Salt to taste
  • 2 Tbsp Fresh parsley, chopped
  • ½ tsp Lemon zest (optional)

Preparation
  1. Pat the shrimp dry and season with salt, pepper, and red-pepper flakes. Set them aside.
  2. Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to package directions until al dente.

Notes

Reserve some pasta water before draining for thinning the sauce if needed.
