  • 12 oz Cooked, peeled shrimp medium-sized
  • 2 Ripe avocado large
  • 1 cup Cherry tomatoes halved
  • ¼ cup Red onion finely diced
  • ¼ cup Fresh cilantro chopped
  • 1 Jalapeño seeded, minced
  • 2 Tbsp Lime juice
  • 1 Tbsp Extra-virgin olive oil
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • 12-15 Mini tortilla cups or butter lettuce leaves
  • garnishes crumbled feta, crema, or hot sauce

Method
 

Preparation
  1. Place the cooked shrimp in a medium bowl, add lime juice, chili powder (½ tsp), and a pinch of salt.
  2. Toss gently and set aside. Slice avocados in half, remove the pit, and scoop the flesh into a separate bowl. Dice into ½-inch cubes and drizzle with a little lime juice.

Notes

For an extra kick, leave some seeds in the jalapeño. Ensure avocados are ripe but firm for best texture.
