  • 1 lb 450 g Large shrimp, peeled & deveined (frozen, thawed)
  • 1 cup 190 g Wild rice blend
  • 4 large Bell peppers (red, yellow, orange)
  • ½ cup Onion, finely diced
  • 3 cloves Garlic, minced
  • 2 cups Low-sodium chicken broth (or vegetable broth)
  • 2 Tbsp Olive oil
  • 2 Tbsp Fresh parsley, chopped
  • 1 tsp Lemon zest
  • ½ cup Shredded mozzarella cheese
  • Salt & black pepper to taste
  • ¼ tsp Red pepper flakes (optional)
  • 2 Tbsp Grated Parmesan (optional)

Preheat & Prep
  1. Preheat oven to 400°F (200°C) and prepare the bell peppers by halving them and removing seeds.
