Ingredients
  

Main Ingredients
  • 1 lb large shrimp, peeled and deveined fresh or frozen, thawed
  • 1 head broccoli, cut into small florets
  • 2 carrots, thinly sliced or julienned
  • 1 bell pepper (any color), thinly sliced
  • 1 cup snap peas
  • 4 oz mushrooms, sliced
  • 1 small onion or ½ large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
For the Sauce
  • ¼ cup low-sodium soy sauce
  • 2 tbsp oyster sauce optional
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • ¼ cup water or chicken broth
Other
  • 2 tbsp high smoke point oil (e.g., peanut, canola, or grapeseed oil)
  • Cooked rice or noodles, for serving

Method
 

Preparation
  1. Prepare all ingredients by peeling and deveining the shrimp, chopping vegetables to a similar size, mincing garlic, and grating ginger.
Cooking
  1. Whisk together soy sauce, oyster sauce, rice vinegar, brown sugar, sesame oil, cornstarch, and water/broth in a small bowl until smooth.
  2. Heat 1 tablespoon of oil in a large wok or skillet over high heat. Cook the shrimp in batches for 1-2 minutes per side until pink and opaque; remove and set aside.
  3. Add the remaining 1 tablespoon of oil to the hot pan. Add garlic and ginger, stir-frying for 30 seconds until fragrant.
  4. Add broccoli, carrots, and onions, stir-frying for 3-4 minutes until tender-crisp.
  5. Add bell pepper, snap peas, and mushrooms, stir-frying for another 2-3 minutes until bright and crisp-tender.
  6. Return the shrimp to the pan. Re-whisk the sauce and pour it over the ingredients, stirring continuously for 1-2 minutes until thickened and evenly coated.
  7. Remove from heat and serve immediately over rice or noodles.

Notes

Ensure all ingredients are prepped before you start cooking, as stir-frying is a very fast process. Do not overcrowd your pan to ensure ingredients cook evenly and get a good sear rather than steaming.
