Preparation
- Prepare all ingredients by peeling and deveining the shrimp, chopping vegetables to a similar size, mincing garlic, and grating ginger.
Cooking
- Whisk together soy sauce, oyster sauce, rice vinegar, brown sugar, sesame oil, cornstarch, and water/broth in a small bowl until smooth.
- Heat 1 tablespoon of oil in a large wok or skillet over high heat. Cook the shrimp in batches for 1-2 minutes per side until pink and opaque; remove and set aside.
- Add the remaining 1 tablespoon of oil to the hot pan. Add garlic and ginger, stir-frying for 30 seconds until fragrant.
- Add broccoli, carrots, and onions, stir-frying for 3-4 minutes until tender-crisp.
- Add bell pepper, snap peas, and mushrooms, stir-frying for another 2-3 minutes until bright and crisp-tender.
- Return the shrimp to the pan. Re-whisk the sauce and pour it over the ingredients, stirring continuously for 1-2 minutes until thickened and evenly coated.
- Remove from heat and serve immediately over rice or noodles.
Notes
Ensure all ingredients are prepped before you start cooking, as stir-frying is a very fast process. Do not overcrowd your pan to ensure ingredients cook evenly and get a good sear rather than steaming.
