Cooking Steps
- Heat a large cast-iron or non-stick skillet over medium-high heat, then add 2 tablespoons of olive oil and let it shimmer.
- Add the diced red onion and minced garlic to the pan, cooking and stirring for 2-3 minutes until they become translucent and fragrant.
- If using, stir in the diced bell pepper and cook for an additional minute.
- Spread the cubed sweet potatoes in an even layer in the skillet and let them cook undisturbed for 3 minutes to achieve a golden brown crust.
Notes
For best results, do not overcrowd the pan when browning the sweet potatoes to ensure they get crispy. Adjust the amount of smoked paprika and cumin based on your spice preference.
