  • 1 medium Red bell pepper, sliced
  • 1 medium Yellow bell pepper, sliced
  • 1 large (about 8 oz) Zucchini, halved & sliced
  • ½ medium Red onion, cut into wedges
  • 3 Tbsp Olive oil
  • 2 cloves Fresh garlic, minced
  • 1 whole Lemon, zest + juice
  • 1 tsp Dried oregano
  • ½ tsp Smoked paprika
  • ½ tsp Salt plus to taste
  • ¼ tsp Freshly ground black pepper
  • 2 Tbsp Fresh parsley, chopped
  • 2 Tbsp grated Parmesan Optional
