  • 1.5 lbs salmon fillets skin on or off
  • 1 bunch asparagus woody ends trimmed
  • 1 lemon thinly sliced, plus extra for serving
Herb Mixture
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon garlic powder
Seasoning & Garnish
  • Salt and freshly ground black pepper to taste
  • Fresh parsley chopped (for garnish, optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Arrange the salmon fillets and trimmed asparagus on the prepared baking sheet.
Seasoning & Roasting
  1. Whisk together olive oil, oregano, thyme, and garlic powder in a small bowl.
  2. Drizzle half of the mixture over the salmon and the remaining half over the asparagus, then season generously with salt and pepper.
  3. Place lemon slices over the salmon and scatter some among the asparagus.
  4. Roast for 12-18 minutes until the salmon is cooked through and the asparagus is tender-crisp.
Serving
  1. Carefully remove the baking sheet from the oven and garnish with fresh chopped parsley if desired.
  2. Serve immediately with extra lemon wedges on the side.

Notes

The cooking time for salmon can vary based on thickness; aim for an internal temperature of 145°F (63°C). For extra flavor, marinate the salmon in the olive oil mixture for 15-30 minutes before roasting.
