Preparation
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat salmon fillets dry, brush with olive oil, and season with salt and pepper.
Sauce and Baking
- Whisk together soy sauce, rice vinegar, sesame oil, honey/maple syrup, minced garlic, grated ginger, and sriracha (if using) in a small bowl.
- Place salmon on the baking sheet, spoon half of the sauce over it, and reserve the rest. Bake for 12-15 minutes until cooked through.
Assembly and Serving
- While salmon bakes, divide cooked rice and sliced cucumbers between two serving bowls.
- Transfer cooked salmon to bowls, drizzle with remaining sauce, and garnish if desired. Serve immediately with a lime wedge.
