  • 2 (6 oz) salmon fillets skin on or off
  • 1 tbsp olive oil
  • Salt to taste
  • black pepper to taste
Sesame Ginger Sauce
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
  • 1/2 tsp sriracha optional
For Serving
  • 2 cups cooked sushi rice or brown rice
  • large cucumber thinly sliced or diced
  • toasted sesame seeds optional garnish

  • lime wedge, optional garnish

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat salmon fillets dry, brush with olive oil, and season with salt and pepper.
Sauce and Baking
  1. Whisk together soy sauce, rice vinegar, sesame oil, honey/maple syrup, minced garlic, grated ginger, and sriracha (if using) in a small bowl.
  2. Place salmon on the baking sheet, spoon half of the sauce over it, and reserve the rest. Bake for 12-15 minutes until cooked through.
Assembly and Serving
  1. While salmon bakes, divide cooked rice and sliced cucumbers between two serving bowls.
  2. Transfer cooked salmon to bowls, drizzle with remaining sauce, and garnish if desired. Serve immediately with a lime wedge.
