- In a large bowl, combine the diced sweet potatoes, trimmed green beans, minced garlic, and sliced red onion.
- Add your chosen protein to the bowl, ensuring raw chicken is diced similarly to the sweet potatoes.
- Drizzle generously with olive oil and sprinkle with salt, black pepper, smoked paprika, and dried thyme.
- Toss everything until evenly coated and spread in a single layer on the prepared baking sheet. Use two sheets if necessary to avoid overcrowding.
Cooking
- Roast for 20-30 minutes until sweet potatoes are tender and caramelized, green beans are tender-crisp, and any raw protein is cooked through.
- Stir halfway through cooking for even browning.
- Remove from oven, garnish with fresh parsley or cilantro if desired, and serve warm.
