  • 2 medium-sized sweet potatoes peeled and diced into 1-inch cubes (approx. 400g)
  • 1/2 pound (approx. 225g) fresh green beans trimmed
  • 1/4 cup olive oil
  • 3 cloves garlic minced
  • 1/2 red onion sliced (optional)
  • 12 oz (approx. 340g) pre-cooked chicken sausage sliced (or 1 lb diced raw chicken breast, or 1 can chickpeas, drained)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Fresh parsley or cilantro chopped (for garnish, optional)

Method
 

Preperation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the diced sweet potatoes, trimmed green beans, minced garlic, and sliced red onion.
  3. Add your chosen protein to the bowl, ensuring raw chicken is diced similarly to the sweet potatoes.
  4. Drizzle generously with olive oil and sprinkle with salt, black pepper, smoked paprika, and dried thyme.
  5. Toss everything until evenly coated and spread in a single layer on the prepared baking sheet. Use two sheets if necessary to avoid overcrowding.
Cooking
  1. Roast for 20-30 minutes until sweet potatoes are tender and caramelized, green beans are tender-crisp, and any raw protein is cooked through.
  2. Stir halfway through cooking for even browning.
  3. Remove from oven, garnish with fresh parsley or cilantro if desired, and serve warm.

Notes

For an extra touch of flavor, try adding a squeeze of fresh lemon juice before serving.
