Ingredients

Crust
  • 1 ½ cups graham cracker crumbs
  • ¼ cup unsalted butter, melted
Filling
  • 1 can sweetened condensed milk
  • 2 cups shredded sweetened coconut
  • 1 cup fresh or frozen raspberries
  • ½ cup white chocolate chips optional

Equipment

  • baking pan
  • parchment paper
  • mixing bowls
  • wire rack

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper, allowing for an overhang.
  2. Combine graham cracker crumbs and melted butter in a bowl, then press the mixture evenly into the bottom of the prepared pan for the crust.
Baking
  1. Pour sweetened condensed milk over the crust, then sprinkle with shredded coconut, raspberries, and optional white chocolate chips.
  2. Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
Cooling
  1. Allow the bars to cool completely in the pan on a wire rack before lifting them out with the parchment paper and cutting them into squares to ensure clean cuts.

Notes

Cooling entirely is essential for clean cuts, so be patient! If using frozen raspberries, there's no need to thaw them first.
