Method
 

Cooking Turkey Mixture
  1. Heat olive oil in a large skillet over medium-high heat. Add chopped onion and cook until softened, then stir in minced garlic and cook for one minute more.
  2. Add ground turkey to the skillet, breaking it up and cooking until browned. Drain any excess fat.
  3. Stir in mixed frozen vegetables and Italian seasoning, seasoning with salt and pepper. Cook for 5-7 minutes until vegetables are tender-crisp.
Assembly
  1. Prepare brown rice according to package directions while the turkey mixture cooks.
  2. Divide cooked brown rice among serving bowls, then top with the ground turkey and vegetable mixture.
  3. Garnish with shredded Parmesan cheese and fresh chopped parsley, then serve immediately.

Notes

For extra flavor, try adding a pinch of red pepper flakes with the Italian seasoning. You can also customize the vegetables based on what you have on hand or what you prefer, such as bell peppers or spinach. This recipe is also great for meal prepping; simply store the turkey mixture and rice separately and combine when ready to eat.
