  • 1 cup canned pumpkin puree (100% pumpkin)
  • ½ cup milk (whole milk, almond, or oat milk)
  • 2 large eggs
  • 2 tablespoons brown sugar (or maple syrup)
  • 1 teaspoon pumpkin pie spice (or mix of cinnamon, nutmeg, ginger, cloves)
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 8 slices thick-cut bread (brioche, challah, or Texas toast)
  • 2 tablespoons butter or coconut oil

Method
 

The French Toast
  1. In a shallow dish, whisk together the pumpkin puree, milk, eggs, brown sugar, pumpkin pie spice, vanilla extract, and salt until smooth.
  2. Heat a large non-stick skillet or griddle over medium heat and melt butter or coconut oil.
  3. Dip each bread slice into the pumpkin mixture, coating both sides well, allowing excess to drip off.
  4. Place soaked bread in the skillet and cook for 3-4 minutes per side until golden brown, adjusting heat as needed.
  5. Repeat with remaining bread, adding more butter or oil between batches.
  6. Serve hot with your preferred toppings like maple syrup, whipped cream, pecans, or powdered sugar.

Notes

For extra flavor, lightly toast the bread before dipping. This will help prevent it from becoming too soggy. Feel free to adjust the amount of pumpkin pie spice to your taste, or add a pinch of ground cloves for a warmer flavor. This French Toast is best served immediately after cooking.
