  • 1/4 cup onion finely chopped
  • 1 cup spinach roughly chopped
  • 1/2 cup cheddar cheese shredded

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with cooking spray.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well beaten and frothy.
  3. Stir in the cooked sausage, diced bell pepper, finely chopped onion, and roughly chopped spinach into the egg mixture.
  4. Pour the mixture evenly into the prepared baking dish.
  5. Bake for 30-40 minutes, or until the center is set and the top is lightly golden; a knife inserted should come out clean.
  6. Remove from the oven and let cool for 5-10 minutes before slicing and serving.

Notes
