  • 1 lb lean ground beef 90/10 or 93/7
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 large bell pepper any color, chopped
  • 1 zucchini chopped
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 (14.5 oz) can diced tomatoes undrained
  • ½ cup beef broth
For Serving & Garnish
  • Cooked brown rice for serving
  • Fresh parsley chopped (for garnish)

Cooking Instructions
  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up until browned, then drain excess fat.
  2. Add chopped onion, minced garlic, bell pepper, and zucchini to the skillet with the beef; cook for 5-7 minutes until softened.
  3. Stir in oregano, paprika, salt, and black pepper; cook for 1 minute, stirring constantly, until fragrant.
  4. Pour in undrained diced tomatoes and beef broth, then bring the mixture to a simmer.
  5. Reduce heat to medium-low, cover, and simmer for 10-15 minutes to meld flavors and tenderize vegetables.
  6. Taste and adjust seasoning as needed before serving.
  7. Serve hot over cooked brown rice and garnish with fresh chopped parsley if desired.

Notes

This recipe is a great way to incorporate more vegetables into your diet. For a spicier kick, add a pinch of red pepper flakes with the other seasonings. If you don't have beef broth, water can be used as a substitute, but the beef broth will add more depth of flavor.
