Ingredients
  

For the Peach Filling
  • 6 cups fresh peaches, peeled, pitted, and sliced about 6-8 medium peaches
  • ½ cup granulated sugar adjust to your peaches' sweetness
  • ¼ cup packed light brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch salt
For the Topping
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cut into small cubes 1 stick
  • ½ cup milk whole or 2%
  • ¼ teaspoon vanilla extract
  • 1 tablespoon coarse sugar for sprinkling optional, for extra crunch

Method
 

Prep the Peaches
  1. Combine peaches, sugars, cornstarch, lemon juice, cinnamon, nutmeg, and salt in a large saucepan.
  2. Cook over medium heat for 5-7 minutes until the mixture thickens and peaches are tender; then remove from heat.
Make the Topping
  1. Whisk together flour, granulated sugar, baking powder, and salt in a large bowl.
  2. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
Finish the Topping
  1. Whisk milk and vanilla extract in a separate small bowl.
  2. Pour wet ingredients into dry ingredients and stir just until combined, avoiding overmixing.
Assemble the Cobbler
  1. Pour the warm peach filling into a 9x13 inch baking dish.
  2. Drop spoonfuls of biscuit topping evenly over the peaches, and optionally sprinkle with coarse sugar.
Bake to Perfection
  1. Bake in a preheated oven at 375°F (190°C) for 30-35 minutes until golden brown and bubbly.
  2. Let it rest for 15-20 minutes before serving to allow the filling to set.

Notes

For best results, use ripe, juicy peaches. You can adjust the amount of sugar in the peach filling based on the natural sweetness of your peaches. Serve warm with a scoop of vanilla ice cream for an extra treat.
