Main Ingredients
  • 1 cup Long-grain white rice
  • 12 oz Raw shrimp, peeled & deveined (≈ 340 g)
  • 1 Large egg (optional)
  • ½ cup Onion, diced
  • ½ cup Carrot, diced small
  • ½ cup Frozen peas
  • 2 tsp Garlic, minced
  • 1 tsp Fresh ginger, minced
Sauce and Garnish
  • 3 Tbsp Soy sauce (low-sodium)
  • 1 Tbsp Oyster sauce
  • 1 tsp Sesame oil
  • 1 ½ cup Chicken or vegetable broth
  • 2 Tbsp Vegetable oil (high smoke point)
  • 2 Tbsp Green onions, sliced
  • 1 Tbsp Fresh cilantro, chopped
  • 4 Lime wedges small (for serving, optional)
  • Black pepper to taste

Method
 

Cooking Steps
  1. Heat a large skillet or wok over medium-high heat. Add 2 tablespoons of vegetable oil, then swirl to coat the pan.
  2. Add the diced onion, minced garlic, and minced ginger to the pan and sauté for about 2-3 minutes, until fragrant.

Notes

For extra flavor, use day-old rice if possible. Adjust soy sauce and oyster sauce to your taste. You can easily substitute shrimp with chicken or tofu if desired.
