Ingredients
  

Chicken
  • 1.5 - 2 lbs boneless, skinless chicken breasts (cut into 1-inch thick cutlets or pounded)
Vegetables & Cheese
  • 1 pint (about 2 cups) cherry or grape tomatoes halved or whole
  • 8 oz fresh mozzarella cheese sliced or torn into pieces
  • 1/2 cup fresh basil packed, roughly chopped or torn
Seasoning & Oil
  • 2-3 tablespoons olive oil
  • 1 teaspoon garlic powder (or 2-3 cloves minced fresh garlic)
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Method
 

Baking Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a large baking sheet by lining it with parchment paper.
  2. Pat the chicken breasts dry and toss them in a bowl with 1 tablespoon of olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
  3. Arrange the seasoned chicken in a single layer on one side of the baking sheet and scatter the cherry tomatoes around the chicken. Drizzle the tomatoes with the remaining olive oil and season them lightly.
  4. Bake for 15-20 minutes, or until the chicken is mostly cooked through and the tomatoes have softened and burst.
  5. Remove the baking sheet from the oven and evenly distribute the fresh mozzarella over the chicken and exposed tomatoes.
  6. Return the pan to the oven and bake for another 5-10 minutes, until the mozzarella is melted, bubbly, and slightly golden.
  7. Remove from the oven, sprinkle generously with fresh basil leaves, and serve hot.

Notes

For extra flavor, you can marinate the chicken for 30 minutes before baking. Ensure chicken is cooked to an internal temperature of 165°F (74°C).
