  • 2 cups Rolled Oats not instant!
  • 2 medium Apples about 3 cups chopped, Honeycrisp, Fuji, Gala, or Granny Smith, peeled, cored, and chopped into 1/2-inch pieces
  • 2 cups Milk dairy or non-dairy
  • 2 Large Eggs
  • 1/4 cup Maple Syrup or Honey adjust to taste
  • 2 tablespoons Unsalted Butter melted (or coconut oil for dairy-free)
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract

Method
 

Bake
  1. Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a large bowl, whisk together the rolled oats, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk together milk, eggs, maple syrup, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the chopped apples.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 35-45 minutes, until golden brown and set; a knife inserted should come out mostly clean.
  8. Remove from oven and let cool for 5-10 minutes before serving to allow it to set.

Notes

For a thicker bake, use an 8x8 inch dish instead of 9x13 inch. Adjust maple syrup or honey to your preferred level of sweetness.
