  • 1/2 cup chopped bell peppers (any color)
  • 1/4 cup chopped onion
  • 1/2 pound cooked breakfast sausage or diced ham optional
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • Salt and black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with cooking spray or butter.
Cooking
  1. Sauté fresh spinach, peppers, or onions for 3-5 minutes to soften and enhance flavor; ensure any pre-cooked meat is heated through.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, and optional garlic/onion powder until well combined and frothy.
  3. Spread vegetables and meat evenly in the baking dish, then sprinkle with half of the shredded cheese.
  4. Pour the egg mixture over the ingredients and top with the remaining cheese.
  5. Bake for 30-40 minutes until the casserole is set in the center and golden brown; a knife inserted should come out clean.
Serving
  1. Allow the casserole to rest for 5-10 minutes before slicing and serving for cleaner cuts and better firmness.

Notes

This casserole is highly customizable; feel free to add other vegetables like mushrooms or zucchini, or different types of cheese. It can also be assembled the night before and baked in the morning for a quick breakfast.
