Classic No-Fuss Meatloaf Dinner

Ingredients
  

Meatloaf
  • 1.5 lbs Ground Beef 80/20 lean-to-fat ratio
  • 1/2 cup Breadcrumbs plain or panko
  • 1 Egg large
  • 1/2 cup Onion finely diced
  • 1/4 cup Milk
  • 1/4 cup Ketchup divided
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Garlic Powder
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper to taste
Glaze
  • 1/4 cup Ketchup
  • 1 tbsp Brown Sugar
  • 1 tsp Dijon Mustard

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and lightly grease a loaf pan or line a baking sheet with parchment paper.
Cooking
  1. In a large bowl, combine ground beef, breadcrumbs, egg, onion, milk, 1/4 cup ketchup, Worcestershire sauce, garlic powder, salt, and pepper, mixing until just incorporated.
  2. Transfer the mixture to the loaf pan or shape into a loaf on the baking sheet and bake for 45-50 minutes, until the internal temperature reaches 140-150°F (60-65°C).
  3. Whisk together the remaining 1/4 cup ketchup, brown sugar, and Dijon mustard for the glaze. Remove meatloaf, spread glaze, and return to oven for 10-15 minutes until internal temperature reaches 160°F (71°C) and glaze is caramelized.
Serving
  1. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

For best results, do not overmix the meatloaf mixture, as this can lead to a tough texture.
