  • 2 cups shredded cheese cheddar, Monterey Jack, or a blend

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Cook raw sausage in a skillet until browned, then drain excess grease. If using ham or bacon, chop it into small pieces.
  3. Whisk the eggs in a large bowl and season with salt and pepper.
  4. Stir the cooked meat and shredded cheese into the whisked eggs.
  5. Pour the mixture evenly into the prepared baking dish.
  6. Bake for 25-35 minutes until set and lightly golden, and a knife inserted comes out clean.
  7. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

This casserole is excellent for meal prep; bake it ahead of time and reheat individual servings throughout the week. You can also add chopped vegetables like bell peppers or onions for extra flavor and nutrients. For a spicier kick, try adding a pinch of red pepper flakes to the egg mixture.
