  • 4–6 bone-in, skin-on chicken thighs
  • 2 Tbsp extra-virgin olive oil
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 1 ½ cup canned diced tomatoes drained
  • ½ cup chicken broth low-sodium
  • ¼ cup dry white wine optional
  • ¼ cup Kalamata olives pitted and halved
  • ¼ cup crumbled feta cheese
  • 1 Tbsp capers rinsed (optional)
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 1 lemon zest
  • ½ lemon juice
  • Salt to taste
  • freshly ground black pepper to taste
  • Fresh parsley, chopped for garnish

Method
 

Instructions
  1. Pat the chicken dry, then season it with salt, pepper, and oregano.
  2. Heat olive oil in a skillet over medium heat, then sear the chicken skin-side down for 3-4 minutes, flip, and sear for 2 minutes before transferring to a plate.
  3. In the same skillet, sauté the diced onion for 4 minutes until it becomes translucent.

Notes

For best results, use a high-quality skillet for searing to achieve a nice crispy skin on the chicken. Adjust seasoning to your preference.
