Classic Meatloaf Dinner with Potatoes

Ingredients
  

For the Meatloaf
  • 1 ½ lbs ground beef 80/20 recommended
  • large egg lightly beaten
  • ½ cup breadcrumbs Panko or traditional
  • ½ cup milk
  • ¼ cup finely chopped onion
  • 1 clove garlic minced
  • 1 tsp dried Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper freshly ground
For the Glaze
  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce
For the Potatoes
  • 1 ½ lbs Yukon gold or red potatoes cut into 1-inch chunks
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh rosemary or thyme chopped (optional)

Method
 

Prep
  1. Preheat your oven to 375°F (190°C) and lightly grease a large baking sheet or a 9x13 inch baking dish.
Meatloaf
  1. In a large bowl, gently combine the ground beef, egg, breadcrumbs, milk, chopped onion, minced garlic, Italian seasoning, salt, and pepper; avoid overmixing.
  2. Form the meat mixture into a loaf shape, about 8-9 inches long and 4-5 inches wide, and place it in the prepared baking sheet/dish.
Potatoes
  1. In a separate bowl, toss the potato chunks with olive oil, salt, pepper, and optional herbs until evenly coated.
Baking and Glazing
  1. Place the meatloaf in the oven and bake for 30 minutes.
  2. After 30 minutes, remove the baking sheet from the oven and arrange the seasoned potatoes around the meatloaf.
  3. Whisk together the ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce for the glaze.
  4. Spoon about half of the glaze over the meatloaf, then return the baking sheet to the oven to bake for another 25-30 minutes.
Finish
  1. Cook until the meatloaf reaches an internal temperature of 160°F (71°C) and the potatoes are tender and lightly browned.
  2. Brush the remaining glaze over the meatloaf and let it rest for 10-15 minutes before slicing to ensure a moist and flavorful result.

Notes

For best results, avoid overmixing the meatloaf mixture to keep it tender. Letting the meatloaf rest after baking is crucial for a juicy outcome.
