Prep
- Preheat your oven to 375°F (190°C) and lightly grease a large baking sheet or a 9x13 inch baking dish.
Meatloaf
- In a large bowl, gently combine the ground beef, egg, breadcrumbs, milk, chopped onion, minced garlic, Italian seasoning, salt, and pepper; avoid overmixing.
- Form the meat mixture into a loaf shape, about 8-9 inches long and 4-5 inches wide, and place it in the prepared baking sheet/dish.
Potatoes
- In a separate bowl, toss the potato chunks with olive oil, salt, pepper, and optional herbs until evenly coated.
Baking and Glazing
- Place the meatloaf in the oven and bake for 30 minutes.
- After 30 minutes, remove the baking sheet from the oven and arrange the seasoned potatoes around the meatloaf.
- Whisk together the ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce for the glaze.
- Spoon about half of the glaze over the meatloaf, then return the baking sheet to the oven to bake for another 25-30 minutes.
Finish
- Cook until the meatloaf reaches an internal temperature of 160°F (71°C) and the potatoes are tender and lightly browned.
- Brush the remaining glaze over the meatloaf and let it rest for 10-15 minutes before slicing to ensure a moist and flavorful result.

For best results, avoid overmixing the meatloaf mixture to keep it tender. Letting the meatloaf rest after baking is crucial for a juicy outcome.
