  • 1/2 cup milk dairy or non-dairy
  • 1/2 cup shredded cheddar cheese plus more for topping
  • 1 cup cooked breakfast sausage crumbled
  • 1 small bell pepper diced
  • 1/2 small onion diced
  • 1 cup fresh spinach roughly chopped
  • Salt to taste
  • Black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Sauté diced bell pepper and onion in a pan for 3-5 minutes until softened.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
Assembly and Baking
  1. Spread the cooked sausage evenly over the bottom of the prepared baking dish.
  2. Top with the sautéed bell pepper, onion, and fresh spinach, then sprinkle half of the shredded cheddar cheese over the vegetables.
  3. Carefully pour the egg mixture over the ingredients, gently shaking the dish for even settling.
  4. Sprinkle the remaining shredded cheese over the top and bake for 30-35 minutes until set and golden brown.
  5. Let the casserole cool for 5-10 minutes before slicing and serving.

Notes

This casserole can be made ahead of time and stored in the refrigerator for up to 3-4 days. Reheat individual portions in the microwave or oven. For an extra kick, add a pinch of red pepper flakes to the egg mixture. You can experiment with different vegetables like mushrooms, zucchini, or sweet potatoes. Make sure the sausage is fully cooked and crumbled before adding it to the casserole.
