Classic Loaded Baked Potato with Steak Bites

Ingredients
  

For the Potatoes
  • 4 large Russet potatoes
  • 2 tbsp olive oil for potatoes
  • 1 tsp sea salt
  • 1/2 tsp black pepper for potatoes
For the Steak
  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1 tbsp olive oil for steak
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt to taste (for steak)
  • Black pepper to taste (for steak)
For the Toppings
  • Sour cream or Greek yogurt
  • shredded cheddar cheese
  • fresh chives

Method
 

Bake the Potatoes
  1. Preheat your oven to 400°F (200°C). Scrub and dry the potatoes, then pierce them with a fork.
  2. Rub the potatoes with olive oil and sprinkle with salt and pepper, then bake directly on the oven rack for 50-70 minutes until tender.
  3. Remove the potatoes from the oven and set aside.
Cook the Steak Bites
  1. While the potatoes bake, pat the steak cubes dry and toss them in a bowl with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat butter in a large skillet over medium-high heat, then add steak in a single layer and sear for 2-3 minutes per side for medium-rare.
  3. Remove steak from heat once cooked.
Assemble and Serve
  1. Slice each baked potato lengthwise, being careful not to cut all the way through, and fluff the inside with a fork.
  2. Divide the cooked steak bites among the potatoes and top with sour cream, cheddar cheese, and chives.
  3. Serve immediately and enjoy!

Notes

For extra flavor, try marinating the steak for at least 30 minutes before cooking. Adjust cooking time for steak based on desired doneness. Feel free to customize toppings with your favorites like bacon bits, green onions, or a dollop of BBQ sauce.
