  • 1 tbsp olive oil
  • 1 lb 93/7 lean ground turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 1/4 tsp black pepper
  • 1 (14.5 oz) can diced tomatoes undrained
  • 1/2 cup chicken broth
  • 1 cup fresh spinach
  • Salt to taste
  • fresh parsley chopped (for garnish)

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet over medium-high heat, then add ground turkey and cook until browned, about 5-7 minutes; drain excess fat.
  2. Add chopped onion and bell pepper to the skillet and sauté for 3-5 minutes until softened.
  3. Stir in minced garlic, oregano, cumin, and black pepper, cooking for 1 minute until fragrant.
  4. Pour in diced tomatoes and chicken broth, bring to a simmer, then reduce heat and cook for 10-15 minutes to meld flavors and reduce liquid.
  5. Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  6. Taste and adjust seasoning with salt as needed.
  7. Serve hot, garnished with fresh chopped parsley, optionally with a side of quinoa or cauliflower rice.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the spices. This dish is great for meal prep and can be stored in the refrigerator for up to 3 days.
