Ingredients

Main Ingredients
  • 1 bunch fresh asparagus spears about 1 pound
  • 1-2 fresh lemons for juice and optional zest
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Freshly ground black pepper to taste

Equipment

  • Baking sheet
  • Large skillet
  • Steamer basket

Method

Preparation
  1. Wash the asparagus and snap off the woody ends where they naturally break; peel the bottom inch of thicker spears if desired.
  2. Preheat oven to 400°F (200°C). Toss asparagus with olive oil, salt, and pepper on a baking sheet, then roast for 8-12 minutes until tender-crisp.
Finishing
  1. Transfer cooked asparagus to a serving dish, then generously squeeze fresh lemon juice over it and add lemon zest for extra fragrance.
  2. Toss gently to coat and serve immediately for optimal taste.

Notes

For even cooking, try to select asparagus spears of similar thickness. Adjust lemon juice and zest to your personal preference for a brighter flavor. This dish is best served immediately after preparation to maintain its tender-crisp texture. If you prefer a nuttier flavor, a sprinkle of toasted slivered almonds can be added before serving.
