  • 1 pound shrimp (about 21-25 count), peeled and deveined, tails on or off
  • 4-6 cloves garlic minced
  • 2 tablespoons olive oil extra virgin
  • 1 tablespoon butter (optional)
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper freshly ground
  • 2 tablespoons fresh parsley chopped (for garnish, optional)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest

Method
 

Preparation
  1. Peel and devein the shrimp if necessary, then pat them thoroughly dry with paper towels.
  2. In a medium bowl, combine the shrimp, minced garlic, olive oil, salt, pepper, lemon juice, and lemon zest, then toss to coat.
Cooking
  1. Heat the butter (if using) and olive oil in a large skillet or frying pan over medium-high heat until shimmering.
  2. Add the seasoned shrimp in a single layer to the hot pan and cook for 1-2 minutes per side, until pink and opaque.
Serving
  1. Remove the shrimp from heat, sprinkle with fresh parsley (if using), and serve immediately.

Notes

For best results, do not overcrowd the pan when cooking the shrimp to ensure even cooking and a nice sear.
