  • 1 pound lean ground turkey (93/7 or 94/6)
  • 1 tablespoon olive oil
  • 1 medium yellow or white onion diced
  • 2 cloves garlic minced
  • 1 bell pepper (any color), diced
  • 1 cup zucchini diced
  • 1 diced tomatoes (14.5 ounce) can, undrained
  • 1/2 cup chicken or vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley or basil chopped (for garnish)

Cooking Steps
  1. Heat the olive oil in a large skillet. Cook the ground turkey, breaking it up, until no longer pink, then drain any excess fat.
  2. Add the diced onion to the skillet and cook until softened. Stir in the minced garlic and cook until fragrant.
  3. Toss in the diced bell pepper and zucchini, then sauté until the vegetables become tender-crisp.
  4. Pour in the undrained diced tomatoes, broth, and tomato paste. Stir in the Italian seasoning, salt, and pepper, then bring the mixture to a gentle simmer.
  5. Reduce heat to low, cover the skillet, and simmer for 10-15 minutes, allowing the flavors to meld and vegetables to finish cooking.
  6. Remove from heat, adjust seasonings as needed, and garnish with fresh parsley or basil before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning. Serve over rice, pasta, or with a side of crusty bread.
