  • 1 pound lean ground turkey 93/7 or 90/10
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2-3 cloves garlic minced
  • 2 bell peppers any color, chopped into 1-inch pieces
  • 1 medium zucchini chopped into half-moons or 1-inch pieces
  • 1 can diced tomatoes 14.5-ounce, undrained (fire-roasted recommended)
  • 1/2 cup chicken or vegetable broth
Seasoning & Garnish
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley or cilantro chopped (optional)

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet over medium-high heat and brown the ground turkey for 5-7 minutes, breaking it up until no longer pink.
  2. Drain any excess fat from the pan. Then, reduce heat to medium before adding chopped onion and minced garlic.
  3. Cook for 3-5 minutes, until the onion softens and garlic becomes fragrant.
  4. Stir in the chopped bell peppers and zucchini.
  5. Pour in undrained diced tomatoes and chicken or vegetable broth. Stir in Italian seasoning, smoked paprika, salt, and black pepper, then bring to a gentle simmer.
  6. Reduce heat to low, cover, and simmer for 15-20 minutes until vegetables are tender-crisp and flavors meld.
  7. Taste and adjust seasonings accordingly.
  8. Serve in bowls and garnish with fresh parsley, cilantro, or Parmesan cheese if desired.

Notes

For a slightly roasted finish, transfer the dish to a preheated oven at 375°F (190°C) and bake for 15-20 minutes, uncovered, after simmering on the stovetop.
