Cooking Steps
- Heat olive oil in a large skillet over medium-high heat and brown the ground turkey for 5-7 minutes, breaking it up until no longer pink.
- Drain any excess fat from the pan. Then, reduce heat to medium before adding chopped onion and minced garlic.
- Cook for 3-5 minutes, until the onion softens and garlic becomes fragrant.
- Stir in the chopped bell peppers and zucchini.
- Pour in undrained diced tomatoes and chicken or vegetable broth. Stir in Italian seasoning, smoked paprika, salt, and black pepper, then bring to a gentle simmer.
- Reduce heat to low, cover, and simmer for 15-20 minutes until vegetables are tender-crisp and flavors meld.
- Taste and adjust seasonings accordingly.
- Serve in bowls and garnish with fresh parsley, cilantro, or Parmesan cheese if desired.
Notes
For a slightly roasted finish, transfer the dish to a preheated oven at 375°F (190°C) and bake for 15-20 minutes, uncovered, after simmering on the stovetop.
