Ingredients

Main Ingredients
  • 2-3 pounds (4-6) bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt to taste
  • Freshly ground black pepper to taste

Equipment

  • Oven
  • Baking sheet
  • Mixing bowl
  • Whisk
  • Instant-read thermometer
  • Paper towels
  • Foil

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet, preferably with a rack, for the chicken.
  2. Pat the chicken thighs dry with paper towels; then, in a small bowl, whisk together olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt, and black pepper.
  3. Drizzle and rub the seasoning mixture evenly over both sides of the chicken thighs.
Cooking and Resting
  1. Place the seasoned chicken on the prepared baking sheet in the preheated oven and bake for 35-45 minutes, until an instant-read thermometer registers 175°F (80°C).
  2. For extra crispy skin, broil for the last 2-3 minutes, watching carefully.
  3. After cooking, remove from the oven and let the chicken rest for 5-10 minutes, loosely tented with foil.

Notes

For best results, ensure chicken thighs are at room temperature before seasoning and baking. Adjust seasoning to your preference.
