Preparation
- Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- Prepare yellow cake mix according to package directions, then pour into the prepared baking dish.
Ricotta Layer
- In a medium bowl, whisk together ricotta cheese, eggs, granulated sugar, and vanilla extract until smooth.
- Carefully spoon the ricotta mixture over the uncooked cake batter in the pan, spreading gently.
Baking and Cooling
- Bake for 50-60 minutes, or until a wooden skewer inserted into the cake comes out mostly clean and the top is golden.
- Remove cake from oven and let it cool completely on a wire rack.
Pudding Topping and Chill
- Once cooled, prepare instant chocolate pudding mix with 3 cups of cold milk according to package directions, whisking until thick.
- Pour the prepared chocolate pudding evenly over the cooled cake, then cover and refrigerate for at least 4 hours, or preferably overnight.

Notes
For best results, allow the cake to chill overnight to ensure the pudding is fully set and the flavors are well-melded.
