Ingredients
  

Cake Base
  • 1 box yellow cake mix plus ingredients to prepare it
Ricotta Layer
  • 15 oz container (about 2 cups) whole milk ricotta cheese
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
Pudding Topping
  • 1 (5.1 oz) package instant chocolate pudding mix
  • 3 cups cold milk

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. Prepare yellow cake mix according to package directions, then pour into the prepared baking dish.
Ricotta Layer
  1. In a medium bowl, whisk together ricotta cheese, eggs, granulated sugar, and vanilla extract until smooth.
  2. Carefully spoon the ricotta mixture over the uncooked cake batter in the pan, spreading gently.
Baking and Cooling
  1. Bake for 50-60 minutes, or until a wooden skewer inserted into the cake comes out mostly clean and the top is golden.
  2. Remove cake from oven and let it cool completely on a wire rack.
Pudding Topping and Chill
  1. Once cooled, prepare instant chocolate pudding mix with 3 cups of cold milk according to package directions, whisking until thick.
  2. Pour the prepared chocolate pudding evenly over the cooled cake, then cover and refrigerate for at least 4 hours, or preferably overnight.
Serve

Notes

For best results, allow the cake to chill overnight to ensure the pudding is fully set and the flavors are well-melded.
